Shrimp Scampi Recipe - Cooking Index
1 1/2 cups | 240g / 8.5oz | Original Minute Rice |
1 cup | 62g / 2.2oz | Onion - chopped (small) |
1 tablespoon | 15ml | Oil |
3/4 lb | 340g / 11oz | Medium shrimp - cleaned |
2 | Garlic cloves - (to 3) - minced | |
1 | Clam juice - (8 oz) | |
1 tablespoon | 15ml | Cornstarch |
1 tablespoon | 15ml | Chopped parsley |
1 tablespoon | 15ml | Lemon juice |
1 | Freshly-ground black pepper | |
1 | Red pepper - diced |
Prepare rice as directed on package. Keep warm.
Cook and stir onion in hot oil in large skillet until tender but not browned. Add shrimp and garlic. Cook and stir until shrimp are pink.
Meanwhile, mix clam juice, cornstarch, parsley, lemon juice and pepper. Add to skillet with red pepper. Bring to boil 1 minute. Serve shrimp mixture over rice.
This recipe yields 4 servings.
