Beefy Bell Peppers

Recipe Ingredients

2 tablespoons 30mlBell peppers - halved lengthwise, (large)
  Seeds and membrane removed
1 lb 454g / 16ozLean ground beef
1 lb 454g / 16ozYellow onion - chopped (small)
1/2 cup 118mlPlain couscous
1   NOT-SO-SLOPPY-JOE® Sloppy Joe Sauce - (14 1/2 oz)
1/4 cup 59mlWater
1/2 cup 73g / 2.6ozShredded Parmesan cheese - divided
1/2 cup 80g / 2.8ozRaisins
1/4 cup 23g / 0.8ozSliced natural almonds - toasted
  Tomato sauce - for serving

Recipe Instructions

Preheat oven to 375 degrees. Immerse peppers into boiling water for 3 minutes; drain and set aside.

In large skillet, cook ground beef and onion; drain. Stir in next three ingredients and 1/4 cup cheese; cook 5 to 7 minutes. Add raisins.

Fill peppers with meat mixture and place in baking dish along with any remaining meat mixture. Bake 15 minutes or until heated through. Sprinkle with remaining cheese and almonds.

Serve with tomato sauce.

This recipe yields 4 servings.
