Roast Cornish Game Hen With Spicy Fruit Salsa Recipe - Cooking Index

Type: Poultry3/4 cup | 177ml | Bottled fruit salsa |
1 1/2 tablespoons | 22ml | Chopped fresh thyme |
1/2 teaspoon | 2.5ml | Hot pepper sauce |
1 tablespoon | 15ml | Olive oil |
3/4 teaspoon | 3.8ml | Ground allspice |
1 3/4 lbs | 794g / 28oz | Cornish game hen - split in half |

Freshly-ground black pepper - to taste |
Preheat oven to 450 degrees. Mix first 3 ingredients in medium bowl. Transfer 3 tablespoons salsa mixture to small bowl and stir in oil and allspice.
Place hen halves on rack set on baking sheet. Sprinkle with salt and pepper; brush with oil mixture. Roast until juices run clear when thigh is pierced, about 25 minutes.
Transfer hen halves to plates. Spoon remaining salsa mixture on top.
This recipe yields 2 servings; can be doubled.
