Roast Cornish Game Hen With Spicy Fruit Salsa

Recipe Ingredients

3/4 cup 177mlBottled fruit salsa
1 1/2 tablespoons 22mlChopped fresh thyme
1/2 teaspoon 2.5mlHot pepper sauce
1 tablespoon 15mlOlive oil
3/4 teaspoon 3.8mlGround allspice
1 3/4 lbs 794g / 28ozCornish game hen - split in half
  Along the backbone
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Preheat oven to 450 degrees. Mix first 3 ingredients in medium bowl. Transfer 3 tablespoons salsa mixture to small bowl and stir in oil and allspice.

Place hen halves on rack set on baking sheet. Sprinkle with salt and pepper; brush with oil mixture. Roast until juices run clear when thigh is pierced, about 25 minutes.

Transfer hen halves to plates. Spoon remaining salsa mixture on top.

This recipe yields 2 servings; can be doubled.
