1/2 cup | 99g / 3.5oz | Butter |
1 cup | 237ml | Half-and-half - (to 1 1/2 cups) |
Cayenne pepper - to taste | ||
1 teaspoon | 5ml | Garlic powder |
1/4 cup | 36g / 1.3oz | Chopped parsley |
1/4 cup | 15g / 0.5oz | Chopped green onions |
2 cups | 292g / 10oz | Grated sharp Cheddar cheese |
1/2 lb | 227g / 8oz | Fresh Maine crab meat |
Paprika - to taste |
Boil the potatoes until soft; drain. Add butter and let melt over hot potatoes. Mash potatoes and add cream, mixing until smooth and not stiff. Add cayenne pepper, garlic powder, parsley, green onions, and cheese to the potatoes. Fold in crab meat.
Place mixture in a casserole dish or individual ramekins and sprinkle with paprika. Bake until heated through and cheese melts. Bake at 400 degrees for 20 to 25 minutes in a casserole dish or 15 to 20 minutes in a ramekin.
