Sausage Packet With Cannellini Beans Recipe - Cooking Index
| 1 | Cannellini beans - (15 1/2 oz) - drained | |
| 1 | Onion - sliced thinly (small) | |
| 3 | Plum tomatoes - diced | |
| 2 tablespoons | 30ml | Fresh basil - cut thin strips |
| 1 tablespoon | 15ml | Extra-virgin olive oil |
| Freshly-ground black pepper - to taste | ||
| 1 | Aluminum foil - (36" long) | |
| 4 | Pork Italian sausage links | |
| Salt - to taste |
Preheat grill on high.
In a bowl, toss beans, onions, tomatoes, olive oil, and basil together. Season with salt and pepper.
Take a 36-inch piece of foil and fold in half to create a double thickness. Place bean mixture on one half and top with sausage links. Fold over other half of foil to cover. Crimp 3 edges of foil together to seal, forming a pouch.
Place packet on grill (sausage-side down) and cook 10 minutes on high. Flip carefully, and cook 10 minutes longer or until juices run clear. Open pouch carefully -- steam is hot.
This recipe yields 4 servings.
