Pork Chops With Honey, Chipotles And Limes Recipe - Cooking Index
Pork goes with just about anything, so here is a little Southwestern twist for something different for that summer afternoon BBQ. Chipotles are jalapeņo peppers that have been smoked. They are available in cans in most large grocery stores or you can smoke them yourself on your backyard grill.

1/2 cup | 118ml | Olive oil |
2 tablespoons | 30ml | Granulated garlic |
1 tablespoon | 15ml | Freshly-ground black pepper |
2 tablespoons | 30ml | Lime juice |
2 tablespoons | 30ml | Sugar |
1/4 cup | 59ml | Water |
Chipotle Sauce | ||
3/4 cup | 177ml | Honey |
1/4 cup | 59ml | Water |
4 tablespoons | 60ml | Mustard |
1 tablespoon | 15ml | Minced Chipotles |
1 teaspoon | 5ml | Ground cumin |
1 teaspoon | 5ml | Paprika |
1 tablespoon | 15ml | Granulated garlic |
1 teaspoon | 5ml | Allspice |
1/2 cup | 8g / 0.3oz | Cilantro chopped |
Salt - to taste |
Combine all marinade ingredients. Marinate the chops in a Ziplock bag for several hours before cooking.
To cook, place the chops over medium heat for around 10 minutes per side or until a meat thermometer reads 150 degrees.
For the Chipotle Sauce: Place everything in a saucepan and cook over low heat for 15 minutes. Stir and serve.
