1 teaspoon | 5ml | Ground turmeric |
2 tablespoons | 30ml | Oil |
1 lb | 454g / 16oz | Pork tenderloin - cut into strips |

Boiled rice - for serving | ||
Peanut Sauce | ||
2 oz | 56g | Creamed coconut - chopped |
4 tablespoons | 60ml | Crunchy peanut butter |
1 tablespoon | 15ml | Lemon juice |
1/2 teaspoon | 2.5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Ground coriander |
1 teaspoon | 5ml | Brown sugar |
1 tablespoon | 15ml | Soy sauce |
2 | Dried red chiles - seeded, chopped | |
1 tablespoon | 15ml | Chopped fresh cilantro |
Process the first 8 ingredients in a food processor until smooth. Cut the pork and toss well with the marinade and chill.
Thread 2 to 3 pork strips onto a soaked skewer. Place on a grill for 2 to 3 minutes each.
For the Peanut Sauce: Dissolve the coconut in 2/3 cup boiling water. Put the remaining ingredients into a saucepan over high heat and bring to a boil, stirring constantly, then simmer for 5 minutes.
Serve the skewers over the rice with the sauce on the side for dipping, or pour the sauce over the skewers.
This recipe yields 8 skewers.
