Ground Lamb Kebabs Recipe - Cooking Index
1 lb | 454g / 16oz | Ground lamb or beef |
1 tablespoon | 15ml | Unsalted butter - melted |
1 tablespoon | 15ml | Thinly-sliced green chiles |
= (serranos or jalapeños) | ||
1/2 cup | 8g / 0.3oz | Chopped fresh cilantro - (lightly packed) |
1 cup | 62g / 2.2oz | Finely-chopped onion |
1 teaspoon | 5ml | Garam masala |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
Coarse salt - to taste | ||
Vegetable oil - for brushing grill |
Combine all ingredients thoroughly and shape into logs that can be threaded onto thin skewers or cooked directly on the grill. Either cook on the grill (2 inches from the heat source) or fry on a well-seasoned heavy griddle. Figure about two minutes on each side for rare, three minutes for medium and four minutes for well-done.
