Ground Lamb Kebabs

Recipe Ingredients

1 lb 454g / 16ozGround lamb or beef
1 tablespoon 15mlUnsalted butter - melted
1 tablespoon 15mlThinly-sliced green chiles
  = (serranos or jalapeños)
1/2 cup 8g / 0.3ozChopped fresh cilantro - (lightly packed)
1 cup 62g / 2.2ozFinely-chopped onion
1 teaspoon 5mlGaram masala
1/2 teaspoon 2.5mlFreshly-ground black pepper
  Coarse salt - to taste
  Vegetable oil - for brushing grill

Recipe Instructions

Combine all ingredients thoroughly and shape into logs that can be threaded onto thin skewers or cooked directly on the grill. Either cook on the grill (2 inches from the heat source) or fry on a well-seasoned heavy griddle. Figure about two minutes on each side for rare, three minutes for medium and four minutes for well-done.
