Freshly-ground black pepper - to taste | ||
Fresh herb sprigs - to taste | ||
= (rosemary, thyme, and parsley) | ||
2 tablespoons | 30ml | Olive oil |
Prepare a barbecue fire, setting the rack about 5 inches above.
Pat the chicken dry, then rub the inside and outside with the lemon's cut side. Sprinkle inside and out with salt and pepper. Stuff the herb sprigs inside the cavity, then rub the outside of the chicken with oil.
Place the chicken on a vertical roaster and BBQ until the thickest part of the breast is 170 degrees, about 1 hour. Transfer to a platter and serve.
