Greek-Style Grilled Lamb Chops Recipe - Cooking Index
3 1/2 lbs | 1589g / 56oz | Lamb loin or rib chops - (to 4 1/2) - trimmed |
= (ea chop 3/4" to 1 1/4" thk) | ||
1/4 cup | 59ml | Dried Greek oregano |
= (or 1/2 cup chopped fresh oregano) | ||
6 | Garlic cloves - chopped | |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
With a knife, nick edges of chops in several places to prevent curling. In small bowl, combine remaining ingredients into a paste and rub all over chops.
Cover bowl or place whole works in a resealable plastic bag. Marinate for 2 hours at room temperature or refrigerate overnight.
Grill chops over medium-hot coals for 3 to 5 minutes on each side, turning once or twice. Set aside for 5 minutes before serving.
This recipe yields 6 to 8 servings.
