Greek-Style Grilled Lamb Chops

Recipe Ingredients

3 1/2 lbs 1589g / 56ozLamb loin or rib chops - (to 4 1/2) - trimmed
  = (ea chop 3/4" to 1 1/4" thk)
1/4 cup 59mlDried Greek oregano
  = (or 1/2 cup chopped fresh oregano)
6   Garlic cloves - chopped
1 teaspoon 5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper

Recipe Instructions

With a knife, nick edges of chops in several places to prevent curling. In small bowl, combine remaining ingredients into a paste and rub all over chops.

Cover bowl or place whole works in a resealable plastic bag. Marinate for 2 hours at room temperature or refrigerate overnight.

Grill chops over medium-hot coals for 3 to 5 minutes on each side, turning once or twice. Set aside for 5 minutes before serving.

This recipe yields 6 to 8 servings.
