8 | Boneless pork loin - (abt 3 oz ea) - trimmed of fat | |
Salt - as needed | ||
2 tablespoons | 30ml | Olive or vegetable oil |
1/4 cup | 59ml | Cider vinegar |
2 teaspoons | 10ml | Finely-chopped garlic |
1 tablespoon | 15ml | Chili powder |
1 teaspoon | 5ml | Ground cumin |
1 teaspoon | 5ml | Dry mustard |
1 teaspoon | 5ml | Honey |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
Preheat a charcoal grill.
To marinate meat: Sprinkle salt over medallions of pork. In mixing bowl, combine olive oil, vinegar, garlic, chili powder, cumin, dry mustard, honey and black pepper. Blend well. Place pork in marinade. Coat well on both sides. Cover with plastic wrap. Let stand in cool place (not refrigerator) for 15 minutes -- and no longer, or it will get mushy.
To cook meat: Place medallions on heated grill. Cook for 5 minutes on 1 side, basting often. Turn. Continue cooking, basting often, for 5 minutes, or until done.
This recipe yields 4 servings.
