Jerk Marinated Pork Recipe - Cooking Index
2 tablespoons | 30ml | Salt |
1 tablespoon | 15ml | Chopped fresh thyme |
1 teaspoon | 5ml | Ground allspice |
1 teaspoon | 5ml | Ground cinnamon |
1 teaspoon | 5ml | Freshly-grated nutmeg |
1 teaspoon | 5ml | Freshly-cracked black pepper |
2 | Jalapeno peppers - seeded, diced | |
1/4 cup | 59ml | Worcestershire sauce |
1/4 cup | 15g / 0.5oz | Thinly-sliced green onions |
1/4 cup | 15g / 0.5oz | Diced onion |
4 | Garlic cloves - minced | |
1/4 cup | 59ml | White vinegar |
2 tablespoons | 30ml | Oil |
2 | Pork tenderloins - trimmed | |

Combine all dry ingredients and mix. Mix in rest of ingredients either by hand or in food processor. Place pork in a non-reactive container and cover with marinade. Let marinate in refrigerator for a few hours or overnight.
On a hot grill, let cook 5 to 6 minutes per side, basting occasionally. To serve, slice on angle and serve with Jamaican Spiced Vegetables.
