Turkey Sausage With Home-Style Potatoes Recipe - Cooking Index
The meat 'n' potatoes lovers in your household will go for this lowfat version of sausage and home-fries. If you have any leftover sausage, refrigerate or freeze it, then reheat it in the microwave when needed. Thawed patties should take about 1 minute.

1/3 cup | 48g / 1.7oz | Fresh whole-grain breadcrumbs |
1/2 teaspoon | 2.5ml | Dried sage |
1/2 teaspoon | 2.5ml | Ground coriander |
1/4 teaspoon | 1.3ml | Fennel seeds |
1/4 teaspoon | 1.3ml | Paprika |
1/4 teaspoon | 1.3ml | Black pepper, freshly ground |
1/8 teaspoon | 0.6ml | Dried marjoram |
1/8 teaspoon | 0.6ml | Dried thyme |
1/8 teaspoon | 0.6ml | Summer savory |
1 | Grated nutmeg | |
1 | Ground red pepper |
To make the potatoes: In a 6-cup glass measure, combine the onions and soy sauce. Microwave on High for 3 minutes. Add the potatoes and toss to combine. Cover with wax paper and microwave on High for 4 minutes. Stir, cover again, and microwave on High for 4 minutes. Let stand, covered, until ready to serve.
To make the sausage: In a medium bowl, combine the turkey, egg white, breadcrumbs, sage, coriander, fennel, paprika, black pepper, marjoram, thyme, savory, nutmeg, and red pepper. Mix well. Form into four patties.
Place the patties on a baking sheet and broil about 4 inches from the heat for about 4 minutes, or until lightly browned on top. Flip and broil several more minutes to brown. Serve hot with the potatoes. This recipe serves 4.
