Super Duper Mashed Potato Casserole Recipe - Cooking Index
A hearty side dish, serve this casserole with any lean meat or poultry for a great fiber (and taste) twist.

5 tablespoons | 75ml | Uncooked Wheatena |
2 lbs | 908g / 32oz | Medium-size potatoes - (abt 6) - peeled and cubed |
1/2 cup | 73g / 2.6oz | Shredded cheddar cheese |
1/4 cup | 15g / 0.5oz | Minced onion |
1 tablespoon | 15ml | Worcestershire sauce - to 2 tablespoons |
1 | Black pepper |
Preheat oven to 350 degrees. Combine milk and Wheatena in a small bowl; set aside. Place potatoes in a 3-quart saucepan with enough water to cover them. Cover and heat to a boil. Cook 20 to 25 minutes or until tender. Drain. Combine Wheatena mixture and potatoes; whip with electric mixer on low speed or mash with a potato masher. Add cheese, onion, Worcestershire sauce and pepper; continue to whip until light and fluffy. Spoon potato mixture into a 2-quart casserole and bake 20 minutes or until heated through. This recipe yields 6 one-cup servings.
