Fish Vera Cruz Recipe - Cooking Index
1 1/4 lbs | 567g / 20oz | Fish fillets or steaks - (1/2" thick) |
1 tablespoon | 15ml | Lime juice |
1 tablespoon | 15ml | Onion - sliced (medium) |
1 tablespoon | 15ml | Green pepper - cut into 3/4" chunks (medium) |
1 | Garlic clove - minced | |
1 tablespoon | 15ml | Vegetable oil |
2 tablespoons | 30ml | Tomatoes - cut into chunks (medium) |
1/2 cup | 118ml | Heinz Chili Sauce |
1/4 cup | 59ml | Sliced pimiento-stuffed olives |
1 | Red pepper | |
Capers for garnish - optional |
Sprinkle fish with lime juice; set aside. Saute onion, green pepper, and garlic in oil until tender-crisp. Add tomatoes and remaining ingredients. Simmer until most of liquid evaporates, about 3 to 5 minutes. Place fish in skillet, spooning sauce over. Simmer 3 to 4 minutes. Turn fish and spoon sauce over. Simmer an additional 3 to 4 minutes or until fish turns opaque and just flakes when tested with fork. To serve, spoon sauce over fish and garnish with capers, if desired. This recipe serves 4.
