Baked Rockfish Recipe - Cooking Index
1/2 cup | 118ml | Basil-Garlic Sauce - * see note |
3 tablespoons | 45ml | Lemon juice |
1 | Carrot - chopped | |
1 | Leek - chopped | |
2 tablespoons | 30ml | Firm butter |
2 lbs | 908g / 32oz | Rockfish or red snapper - drawn |
Heat oven to 375 degrees. Mix Basil-Garlic Sauce, lemon juice, carrot, and leek. Cut butter into small pieces. Place in rectangular baking dish, 13- by 9- by 2-inches. Place rockfish on butter. Spread vegetable mixture over fish. Cover and bake 40 minutes or until fish flakes easily with fork.
