Fontina And Grilled Vegetables Wrap Recipe - Cooking Index
1/2 cup | 118ml | Mayonnaise |
1/4 cup | 10g / 0.4oz | Chopped basil leaves |
Juice of 1 lime | ||
1 | Zucchini (medium) | |
1 | Red, yellow or orange bell pepper - quartered | |
2 | Red onion slices, about 1/4" thick | |
Olive oil | ||
Salt and pepper | ||
2 cups | 474ml | Shredded Romaine lettuce |
1/2 lb | 227g / 8oz | Fontina cheese - grated |
2 lbs | 908g / 32oz | Flour tortillas (large) |
Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice. Stir to blend. Brush vegetables with olive oil. Season with salt and pepper.
Arrange vegetables on a medium-hot barbeque. Cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes.
Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito.
