Lemon Herb Chicken Recipe - Cooking Index
1 lb | 454g / 16oz | Boneless skinless chicken breast meat - chopped |
2 tablespoons | 30ml | Flour |
1/4 tablespoon | 3.8ml | Salt |
1 | Pepper | |
2 tablespoons | 30ml | Margarine |
1/2 cup | 118ml | Chicken broth |
1 tablespoon | 15ml | Lemon juice |
1/4 teaspoon | 1.3ml | Basil leaves - crushed |
Toss chicken pieces around in a plastic bag containing flour, salt, and pepper. In a skillet, brown chicken in margarine. Add all remaining ingredients. Cover and simmer 10 minutes or until tender. Serve with brown rice and mushrooms.
Serving size is 2/3 cup.
