2 1/2 lbs | 1135g / 40oz | Boneless skinless chicken breasts - diced |
2 tablespoons | 30ml | Chopped onion |
2 tablespoons | 30ml | Vegetable oil |
8 tablespoons | 120ml | Onions (small) |
4 | Carrots - chopped | |
3 | Celery stalks - chopped | |
4 | Potatoes - quartered | |
1 | Garlic clove | |
1 | Mushrooms - (3 oz) | |
4 sections | Parsley | |
1/4 teaspoon | 1.3ml | Thyme |
2 cups | 474ml | Red burgundy wine |
1 tablespoon | 15ml | Cornstarch |
Preheat oven to 350 degrees.
In a large skillet, brown chicken and chopped onions in oil. Add whole onions, carrots, celery, potatoes, and garlic. Cook 3 minutes. Add mushrooms, parsley, and thyme. Arrange in a 2-quart casserole dish. Add wine. Cover and cook 2 hours; stir occasionally. Thicken with cornstarch and water at end of 2 hours.
