Healthy Coq Au Vin

Recipe Ingredients

2 1/2 lbs 1135g / 40ozBoneless skinless chicken breasts - diced
2 tablespoons 30mlChopped onion
2 tablespoons 30mlVegetable oil
8 tablespoons 120mlOnions (small)
4   Carrots - chopped
3   Celery stalks - chopped
4   Potatoes - quartered
1   Garlic clove
1   Mushrooms - (3 oz)
4 sections  Parsley
1/4 teaspoon 1.3mlThyme
2 cups 474mlRed burgundy wine
1 tablespoon 15mlCornstarch

Recipe Instructions

Preheat oven to 350 degrees.

In a large skillet, brown chicken and chopped onions in oil. Add whole onions, carrots, celery, potatoes, and garlic. Cook 3 minutes. Add mushrooms, parsley, and thyme. Arrange in a 2-quart casserole dish. Add wine. Cover and cook 2 hours; stir occasionally. Thicken with cornstarch and water at end of 2 hours.
