Porterhouse Steak With Hoisin Barbecue Sauce

2 1/2 lbs 1135g / 40ozPorterhouse steak (1 steak)
  Grilled scallions
  Cast Iron Potato Salad - see * Note
  Sauce
6 tablespoons 90mlHoisin sauce
2 tablespoons 30mlRice wine vinegar
2 tablespoons 30mlSoy sauce
2 tablespoons 30mlUnsalted butter
1/2 tablespoon 7.5mlRed onion - finely diced (medium)
1   Garlic clove - minced
6   Plum tomatoes - coarsely diced
1/4 cup 59mlKetchup
2 tablespoons 30mlDijon mustard
2 tablespoons 30mlDark brown sugar
1 tablespoon 15mlHoney
1 teaspoon 5mlCayenne
1 tablespoon 15mlAncho chile powder
1 teaspoon 5mlPasilla chile powder
1 tablespoon 15mlWorcestershire sauce
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

* Note: See the "Cast Iron Potato Salad" recipe which is included in this collection.

Season the steak with salt and pepper. Combine all sauce ingredients.

Grill the porterhouse for 5 minutes on each side while basting with the sauce. Serve with grilled scallions and Cast Iron Potato Salad.
