Sweet Vidalia Onion Scallop

Recipe Ingredients

1/4 cup 49g / 1.7ozButter or margarine
3 cups 187g / 6.6ozVidalia onions - sliced (medium)
1/4 cup 36g / 1.3ozGreen pepper - chopped
2 tablespoons 30mlPimento - chopped
1 cup 146g / 5.1ozSwiss cheese - grated
1 cup 146g / 5.1ozCracker crumbs
2 cups 396g / 13ozEggs - well beaten (large)
3/4 cup 177mlLight cream
  Salt and pepper to taste
2 tablespoons 30mlMargarine - melted

Recipe Instructions

Preheat oven to 350F.

Grease an 8-inch square baking dish; set aside. In a heavy skillet, melt 1/4 cup margarine over medium heat and cook the onions and green peppers until tender. Stir in pimento.

Place half of the onion mixture in prepared dish. Sprinkle with half of the grated cheese and half of the cracker crumbs. Repeat layers of onion and cheese.

Beat eggs with light cream, salt and pepper. Pour over onions. Sprinkle top with cracker crumbs; lightly drizzle melted margarine over the top.

Bake 25 minutes.
