Spinach-Stuffed Shells

Recipe Ingredients

1   Pa frozen spinach - cooked or thawed and well drained
1 cup 146g / 5.1ozLow-fat or fat-free cottage cheese
1/3 cup 48g / 1.7ozParmesan cheese - fresh grated
1/2 cup 73g / 2.6ozMozzarella cheese - grated
1/4 teaspoon 1.3mlGarlic powder - or to taste
1/2 lb 227g / 8ozLarge pasta shells - al dente
2 1/2 cups 592mlPrepared low-fat marinara sauce
  Mozzarella and parmesan cheese - grated for garnish

Recipe Instructions

Preheat oven to 350F. Mix all ingredients except shells until well blended. Stuff shells with spinach mixture. Cover with marinara sauce. Bake 30 minutes. Sprinkle with a bit of extra cheese before serving.
