Southwestern Egg Casserole Recipe - Cooking Index

1/2 cup | 31g / 1.1oz | All-purpose flour |
1 teaspoon | 5ml | Baking powder |
1/8 teaspoon | 0.6ml | Salt |
4 cups | 584g / 20oz | Shredded Monterey jack cheese |
2 cups | 292g / 10oz | Cottage cheese |
1/2 cup | 99g / 3.5oz | Butter or margarine - melted |
2 | Chopped green chiles |
In a large bowl, beat eggs. Combine flour, baking powder and salt; stir into eggs (batter will be lumpy). Add cheeses, butter and chiles. Pour into a greased 13-in. x 9-in. x 2-in. baking dish.
Bake, uncovered, at 350F for 35-40 minutes or until a knife inserted near the center comes out clean.
Let stand 5 minutes before cutting.
