New Fashioned Scalloped Potatoes

Recipe Ingredients

12 cups 1752g / 61ozPotatoes - pared, diced, up to (medium) 14
1 cup 237mlWater
2 teaspoons 10mlSalt
2/3 cup 131g / 4.6ozMargarine
2/3 cup 41g / 1.4ozFlour
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlPepper
6 cups 1422mlScalded milk
1   Pimiento - chopped
8   Green onions with tops - sliced
1 lb 454g / 16ozSharp cheddar cheese - diced
2 cups 396g / 13ozButtered soft bread crumbs

Recipe Instructions

Put potatoes, 1 cup water and 2 teaspoons of salt in pan. Cover and bring to a boil. Lower heat. Cook for 10 minutes until tender. Drain. Make white sauce n Microwave from margarine, flour, salt, pepper and scalded milk. Stir in pimiento, green onion, cheese and potatoes. Turn into buttered casserole. Top with buttered crumbs.

Bake at 350F. for 30 minutes.

NOTES : A real favorite recipe. Easily cut in half by making half of the sauce and using about 8 potatoes. To make crumbs: butter bread and tear into blender. Blend.
