Mashed Potato Souffle Recipe - Cooking Index
1 | Philadelphia. Cream cheese | |
4 cups | 948ml | Mashed potatoes - (instant ok) |
1 | Beaten egg | |
1 teaspoon | 5ml | Salt |
1/3 cup | 20g / 0.7oz | Onion - chopped |
1/4 cup | 36g / 1.3oz | Pimiento - chopped |
1/2 | Green chiles - diced, 4oz can |
Blend cream cheese into mashed potatoes, add egg, salt, chopped onion pimiento and green chiles. Mix well. Bake in a quart casserole for 45 minutes at 350, longer, if using shallow casserole.

My husband loved this one, and he is not the easiest guy to please.
To me, they have all seemed too "cream cheesy" and I love cream cheese & potatoes. 10/17/94.
