Layered Spinach Bake Recipe - Cooking Index
1 lb | 454g / 16oz | Ground turkey breast |
10 oz | 284g | Frozen spinach - chopped, drained |
1 tablespoon | 15ml | Instant minced onions |
1/8 teaspoon | 0.6ml | Garlic powder |
15 1/2 oz | 440g | Spaghetti sauce - (healthy choice) |
1/4 cup | 36g / 1.3oz | Seasoned bread crumbs - divided |
1 cup | 146g / 5.1oz | Cottage cheese - (Knudsen non-fat) |
1/4 cup | 49g / 1.7oz | Egg beaters - (r) 99% egg substitute |
1/8 teaspoon | 0.6ml | Pepper |
3 oz | 85g | Fat-free mozzarella cheese - shredded |
2 tablespoons | 30ml | Non-fat parmesan cheese - grated |
Microwave spinach covered 4-6 min. on high. Drain, pressing to remove excess moisture. Chop and set aside.
Combine ground turkey, onion, and garlic powder. Cook until no longer pink. Drain. Stir in spaghetti sauce. Cover, microwave on high 2-4 min. until bubbly. Stir in 2 tablespoons of bread crumbs. Set aside.
In medium bowl, combine spinach, remaining 2 tablespoons bread crumbs, cottage cheese, egg and pepper.
Spread half of meat mixture in bottom of 9-inch square microwave safe dish. Top with spinach mixture, sprinkle with mozzarella cheese. Top with remaining meat mixture. Sprinkle with parmesan cheese.
Microwave on high for 3 min. Microwave on 50% power for 8-12 min. more until hot. Let stand for 5 min.
NOTES : Amount of mozz. cheese can be reduced without hurting recipe. Freezes well
