Kathy's Sweet Potatoes Recipe - Cooking Index
3 cups | 711ml | Mashed sweet potatoes - fresh or |
1/2 cup | 99g / 3.5oz | Sugar |
2 tablespoons | 30ml | Melted margarine |
1/3 cup | 78ml | Skim milk |
1/4 cup | 59ml | + 2 T buttermilk |
1 | Egg + 2 egg whites - well beaten | |
1 teaspoon | 5ml | Vanilla |
1/4 teaspoon | 1.3ml | Salt |
Topping | ||
1/3 cup | 53g / 1.9oz | Firmly packed brown sugar |
1/4 cup | 15g / 0.5oz | Flour |
1 1/2 tablespoons | 22ml | Buttermilk |
1 tablespoon | 15ml | Melted margarine |
1/3 cup | 48g / 1.7oz | Chopped pecans |
Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, 1/4 c + 2 T buttermilk, egg, egg whites, vanilla and salt.
Mix well and pour into an 8-inch square baking dish that has been sprayed with Pam. In a small bowl, combine topping ingredients; sprinkle evenly over potato mixture.
Bake at 350F for 25-45 minutes or until set and top is browned.
