2 | White or yellow hominy - 14oz | |
4 | Eggs - beaten | |
8 oz | 227g | Chorizo or pork sausage |
Cooked and drained | ||
3/4 cup | 109g / 3.8oz | Cheddar cheese - shredded |
1/2 cup | 31g / 1.1oz | Green onion - sliced |
1 | Green chilies; chopped - 4oz |
Preheat the oven to 350F.
Grease a 9-inch glass baking dish. In a large bowl combine the hominy, eggs, chorizo, cheese, onion and chilies if desired. Pour into the prepared dish.
Bake for 30 to 35 minutes or until set. Let stand for 5 minutes before serving.
