Green Tomato And Sausage Casserole

Recipe Ingredients

1 tablespoon 15mlButter or oil
1 cup 62g / 2.2ozGreen tomatoes - in 1/2" pieces
1 tablespoon 15mlChopped parsley
1 tablespoon 15mlOnion - coarsely chopped (medium)
2 tablespoons 30mlGreen chiles - sliced, optional (small)
1 tablespoon 15mlCarrot - sliced or chopped (large)
8 oz 227gSmoked sausage - thinly sliced
1 cup 160g / 5.6ozRice
2 cups 474mlChicken broth

Recipe Instructions

Saute onion, green tomato, chiles and carrot in butter or oil for a few minutes. Transfer to a 2 1/2 qt casserole. Stir in rice, sausage, and parsley. Heat broth to boiling and add to casserole.

Cover tightly and bake at 350F for about 40 minutes or until rice is done and liquid is absorbed.

Check after about 30 minutes and add a little additional broth or water if it seems too dry. Makes about 4 servings.

NOTES : Wieners or franks can be used in place of sausage.
