Green Tomato And Sausage Casserole Recipe - Cooking Index
1 tablespoon | 15ml | Butter or oil |
1 cup | 62g / 2.2oz | Green tomatoes - in 1/2" pieces |
1 tablespoon | 15ml | Chopped parsley |
1 tablespoon | 15ml | Onion - coarsely chopped (medium) |
2 tablespoons | 30ml | Green chiles - sliced, optional (small) |
1 tablespoon | 15ml | Carrot - sliced or chopped (large) |
8 oz | 227g | Smoked sausage - thinly sliced |
1 cup | 160g / 5.6oz | Rice |
2 cups | 474ml | Chicken broth |
Saute onion, green tomato, chiles and carrot in butter or oil for a few minutes. Transfer to a 2 1/2 qt casserole. Stir in rice, sausage, and parsley. Heat broth to boiling and add to casserole.
Cover tightly and bake at 350F for about 40 minutes or until rice is done and liquid is absorbed.
Check after about 30 minutes and add a little additional broth or water if it seems too dry. Makes about 4 servings.
NOTES : Wieners or franks can be used in place of sausage.
