Green Chili Rice Recipe - Cooking Index
4 cups | 640g / 22oz | Cooked rice |
1 | Butter | |
1 cup | 62g / 2.2oz | Onion - chopped |
1/2 | Cottage cheese | |
1/2 | Sour cream | |
Salt and pepper to taste | ||
2 1/2 cups | 365g / 12oz | Colby or Jack cheese - grated |
2 | Green chiles - drained and chopped (4 oz ea) | |
1 | Jalapeno pepper - chopped fine |
Saute onion in butter. Add onion to cottage cheese, sour cream and then add rice. Place 1/2 of the mixture in a casserole dish.
Sprinkle on green chilies, jalapenos and grated cheese. Add rest of rice and top with another layer of the cheese and chilies.
Bake at 350F for 20 to 30 minutes until hot and cheese is melted.
