1 cup | 160g / 5.6oz | Rice |
3 tablespoons | 45ml | Oil |
3 | Garlic - minced | |
1 | Onion - chopped (medium) | |
2 cups | 474ml | Chicken broth |
2 cups | 125g / 4.4oz | De-boned chicken - cooked and cut up |
1/4 teaspoon | 1.3ml | Saffron |
2 tablespoons | 30ml | Capers |
1 | Peas | |
1 | Tomato - chopped | |
Salt - to taste |
Saute rice in oil with garlic and onions until brown; stirring continuously.
Add the rest of the ingredients. Pour into a greased baking dish and bake at 400F for 45 minutes covered and an additional 10-15 minutes uncovered.
Any seafood such as shrimp, mussels or squid can be added and is delicious.
