Confetti Potato Casserole Recipe - Cooking Index
1/3 cup | 78ml | Water |
2 tablespoons | 30ml | Butter |
1 tablespoon | 15ml | Onion (medium) |
1 1/2 lbs | 681g / 24oz | Cubed potatoes |
1/2 cup | 73g / 2.6oz | Chopped bell pepper |
2 oz | 56g | Diced pimiento |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1/2 cup | 73g / 2.6oz | Shredded cheddar cheese |
3 | Bacon - cook & crumble |
Combine potatoes and water in a 2 quart casserole. Cover and microwave at HIGH power 8 to 10 minutes or until potatoes are tender, stirring after 4 minutes. Drain; add butter, stirring until butter melts. Add onion, bell pepper, pimiento, salt, and pepper. Bake at 375F for 25 minutes; sprinkle with cheese and bacon. Bake an additional 5 minutes or until cheese melts.
