Asparagus Au Gratin Recipe - Cooking Index
3 lbs | 1362g / 48oz | Fresh asparagus or 3 pkg. Frozen |
2 tablespoons | 30ml | Butter or margarine |
1 tablespoon | 15ml | Flour |
1/2 teaspoon | 2.5ml | Salt |
1 cup | 237ml | Light cream |
1/2 cup | 73g / 2.6oz | Swiss cheese - grated |

Preheat oven to 400F. If using fresh asparagus, trim spears evenly and peel to remove scales. Cook 10 minutes or until tender. Drain well. Melt butter in small pan, add flour and cook over low heat until golden.
Remove from heat. Stir in salt and cream. Return to heat and stir constantly with wooden spoon until mixture bubbles. Cook 1 minute longer. Add cheese. Stir until cheese melts. Arrange asparagus in shallow baking dish. Spoon sauce over this. Sprinkle with bread crumbs and bake 15 minutes or until lightly browned.
