Roast Chicken Tarragon Recipe - Cooking Index
3 lbs | 1362g / 48oz | Frying chicken - whole |
1/4 cup | 59ml | Plain yogurt |
1 tablespoon | 15ml | Mustard - prepared |
1 teaspoon | 5ml | Tarragon - dried crushed |
Rinse chicken and pat dry. Skewer neck skin to back. Tie legs to tail. Twist wing tips under back. Place bird, breast-side up, on a rack in a shallow roasting pan.
Stir together yogurt, mustard and tarragon; brush onto chicken. Roast, uncovered, in a 375 degree oven for 1 1/4 to 1 1/2 hours or until drumsticks move easily. If necessary, to prevent overbrowning, cover with foil the last 30 to 45 minutes.
