1 teaspoon | 5ml | Dried thyme - crushed |

3 lbs | 1362g / 48oz | Meaty chicken pieces |
3 tablespoons | 45ml | Cooking oil |
1 cup | 237ml | Milk |

In small mixing bowl, combine the egg and 3 tablespoonS milk. In a shallow mixing bowl, combine the crackers, thyme, paprika and pepper. Set aside.
Rinse chicken pieces and pat dry with paper towels. Dip chicken pieces, one at a time, in egg mixture, then roll in cracker mixture.
In a large skillet heat oil. Add chicken to skillet, placing meatier pieces toward center. Cook, uncovered, over medium heat for 10 to 15 minutes, turning occasionally to brown evenly. Drain fat. Add the 1 cup milk to skillet. Reduce heat to medium-low; cover tightly. Cook for 35 minutes. Uncover; cook for 10 minutes more, until chicken is tender and no longer pink. Prepare gravy, if desired. Transfer chicken to a warm serving platter and keep warm while preparing Cream Gravy.
