2 teaspoons | 10ml | Paprika |
1 teaspoon | 5ml | Curry powder |
1/2 teaspoon | 2.5ml | Salt |
4 lbs | 1816g / 64oz | Country-style pork ribs |
1 cup | 160g / 5.6oz | Brown sugar - (packed) |
2/3 cup | 157ml | White vinegar |
1/2 cup | 31g / 1.1oz | Onion - chopped |
1/3 cup | 78ml | Spicy brown mustard |
2 | Garlic cloves - minced | |
2 tablespoons | 30ml | Honey |
2 teaspoons | 10ml | Liquid Barbecue Smoke |
1/4 teaspoon | 1.3ml | Celery seed |
In a small bowl, combine the sugar, pepper, paprika, curry powder and salt. Rub over ribs, coating well. Place ribs in shallow pan. Cover and chill for 2 to 6 hours.
In a covered grill, arrange medium coals around a drip pan. Test for medium-low heat above pan. Place ribs, fat-side up, on grill rack over drip pan but not over coals. Lower grill hood. Grill about 1 1/4 hours or until tender, turning once, and adding more coals as needed.
Meanwhile, for sauce, in a medium saucepan combine brown sugar, vinegar, onion, mustard, garlic, honey, liquid smoke and celery seed. Bring to boiling; reduce heat. Cook, uncovered, for 25 to 30 minutes, or until slightly thickened, stirring occasionally during last 10 to 15 minutes, of grilling. Heat any remaining sauce until bubbly and pass with ribs.
