Mandarin Chicken Noodle Recipe - Cooking Index
1 tablespoon | 15ml | Cooking oil |
1 lb | 454g / 16oz | Chicken breast halves |
3 oz | 85g | Chicken flavor oriental noodles |
1 oz | 28g | Zucchini squash - halved, sliced (small) |
2 | Celery stalks - thinly sliced | |
2 | Garlic cloves - minced | |
1/4 cup | 59ml | Sweet and sour sauce - bottled |
2 tablespoons | 30ml | Coarsely-chopped peanuts |
11 oz | 312g | Mandarin oranges in juice - drained |
If using chicken strips, pour oil into wok of large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Stir-fry chicken, half at a time, about 3 minutes, or until no longer pink; remove.
Break up noodles (set flavor packet aside). Add noodles, 1 cup water, zucchini, celery and garlic to wok. Bring to boiling; reduce heat. Cover; simmer 3 to 5 minutes, or until noodles and vegetables are tender. Stir in cooked chicken, the packet contents, sweet and sour sauce and peanuts; heat through. Top each serving with orange sections.
