Whole Grilled Red Snapper Recipe - Cooking Index
A Gulf Coast favorite, red snapper has a beautiful color that makes it the perfect centerpiece for a festive summer party. To complete the warm-weather theme, serve with a fresh vegetable relish such as Chile and Corn Relish.

Seafood Alternatives: salmon, rockfish
Preheat a charcoal grill until the coals glow red with white ash on the edges.
Rinse the fish inside and out; pat dry with paper towel. Brush lightly inside and out with oil and season with salt and pepper to taste. Lay the ginger slices, crushed garlic cloves and green onion inside the cavity; squeeze the juice from 1/2 lemon inside.
Grill in a hinged grilling rack over hot indirect heat, turning once, until the fish flesh is opaque, about 40 minutes.
Alternatively, you can wrap the fish in foil if you don't have a grilling basket for fish.
Transfer the fish to large serving platter, garnish with lemon slices and serve.
