Portuguese-Style Alaska Cod Recipe - Cooking Index
1 cup | 237ml | Sliced mushrooms |
1/4 cup | 15g / 0.5oz | Chopped onion |
1 | Garlic clove - minced | |
2 tablespoons | 30ml | Oil |
1 | Tomatoes - (14 1/2 to 16 oz) - broken up | |
1/4 cup | 59ml | Sliced ripe olives |
1 tablespoon | 15ml | Minced parsley |
1/2 teaspoon | 2.5ml | Oregano - crushed |
1/8 teaspoon | 0.6ml | Salt |
1 | Freshly-ground black pepper | |
1 lb | 454g / 16oz | Cod fillets - thawed if necessary |
Hot cooked rice - (optional) |
Saute mushrooms, onion and garlic in oil. Add remaining ingredients except cod; bring to boil. Cook, uncovered, 10 minutes; stir occasionally.
Cut cod into serving-sized pieces; add to tomato mixture. Cover and cook over medium heat 8 to 10 minutes or until cod flakes easily when tested with a fork; baste occasionally. Serve with rice.
This recipe yields 6 servings.
Tip: If desired, remove cod and add a mixture of 2 teaspoons flour and 1 tablespoon water to tomato mixture. Cook and stir until slightly thickened.
