6 cups | 1422ml | Shredded green cabbage - (about 3/4 lb) |
1 cup | 62g / 2.2oz | Onion - chopped (large) |
1/4 lb | 113g / 4oz | Shannon traditional irish brand slab - cut in 1/4" cubes bacon |
(or other slab bacon) | ||
2 tablespoons | 30ml | Chopped parsley |
1/4 teaspoon | 1.3ml | Leaf thyme |
Salt and pepper - to taste | ||
1 lb | 454g / 16oz | Boiling potatoes - pared, sliced thin |
3/4 cup | 177ml | Defatted chicken broth |
2 oz | 56g | Shredded lowfat cheddar cheese - (1/2 cup) |
Spray a 3-quart casserole dish with cooking spray. Layer with half of cabbage and onions; sprinkle with half of bacon. Sprinkle with half of parsley, thyme, and salt and pepper to taste. Arrange half of potatoes over. Repeat layers ending with potatoes. Pour chicken broth over; sprinkle with cheese. Cover. Bake in a 350 degree oven for 45 minutes. Uncover; bake 15 minutes more or until top is brown. This recipe serves 4.
