Potato, Cabbage And Irish Bacon Casserole

Recipe Ingredients

  Non-stick cooking spray
6 cups 1422mlShredded green cabbage - (about 3/4 lb)
1 cup 62g / 2.2ozOnion - chopped (large)
1/4 lb 113g / 4ozShannon traditional irish brand slab - cut in 1/4" cubes bacon
  (or other slab bacon)
2 tablespoons 30mlChopped parsley
1/4 teaspoon 1.3mlLeaf thyme
  Salt and pepper - to taste
1 lb 454g / 16ozBoiling potatoes - pared, sliced thin
3/4 cup 177mlDefatted chicken broth
2 oz 56gShredded lowfat cheddar cheese - (1/2 cup)

Recipe Instructions

Spray a 3-quart casserole dish with cooking spray. Layer with half of cabbage and onions; sprinkle with half of bacon. Sprinkle with half of parsley, thyme, and salt and pepper to taste. Arrange half of potatoes over. Repeat layers ending with potatoes. Pour chicken broth over; sprinkle with cheese. Cover. Bake in a 350 degree oven for 45 minutes. Uncover; bake 15 minutes more or until top is brown. This recipe serves 4.
