Garlic Sesame Alaska Cod Recipe - Cooking Index

4 | Cod fillets - (5 to 6 oz ea) - thawed if necessary | |
1/4 cup | 59ml | Soy sauce |
2 teaspoons | 10ml | Dark sesame oil |
2 | Garlic cloves - minced | |
1/4 teaspoon | 1.3ml | Red pepper flakes |
3 cups | 594g / 20oz | Fresh sugar snap peas or snow peas |
2 cups | 474ml | Sliced mushrooms |
2 cups | 220g / 7.8oz | Carrots - sliced (medium) |
2 teaspoons | 10ml | Toasted sesame seeds |
Preheat oven to 450 degrees or preheat grill to medium-high. Spray foil with nonstick cooking spray. Center one cod fillet on each sheet or Reynolds Wrap foil.
Combine soy sauce, oil, garlic and red pepper flakes; spoon one tablespoon over each fillet. Top with vegetables. Spoon remaining sauce over vegetables.
Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat circulation inside packet. Repeat to make four packets.
Bake 15 to 18 minutes on a cookie sheet in oven or grill 9 to 11 minutes in covered grill. Sprinkle with sesame seeds before serving.
