Oshkinigikwe (Tomato Stew)

Recipe Ingredients

4 lbs 1816g / 64ozMiniature mexican tomatoes - - washed & deseeded
12   Shallots - chopped
1/3 cup 78mlWater
1/3 cup 30g / 1.1ozCucumber - minced
1 teaspoon 5mlSalt
1/4 teaspoon 1.3mlBlack pepper
1/3 cup 20g / 0.7ozCorn flour

Recipe Instructions

Place tomatoes in a large saucepan, add the shallots & water & simmer for 30 minutes, stirring gently on occasion. Add the cucumbers & salt & pepper, simmer for 10 minutes, stirring, until the tomatoes break up. Quickly add the corn flour, 1 tablespoon at a time, stirring slowly.

Simmer for 5 minutes & serve.
