Almond-Coated Albacore Recipe - Cooking Index
In this recipe, albacore is coated with a mixture of ground, toasted almonds and bread crumbs which, when baked, creates a crunchy coating without the added oil of frying. This crunchy, slightly sweet coating enhances the delicate flavor of albacore, and cranberry sauce on the side adds a complimentary zing!

Loin cuts, 3/4" thick | ||
1 cup | 237ml | Buttermilk |
1/2 cup | 46g / 1.6oz | Ground toasted almonds |
1/2 cup | 73g / 2.6oz | Fresh toasted bread crumbs |
1 teaspoon | 5ml | Grated orange peel |
1 | Berry cranberry sauce |
Rinse albacore with cold water; pat dry with paper towels. Soak albacore in buttermilk for 10 to 15 minutes.
Mix together almonds, bread crumbs and orange peel. Drain buttermilk from albacore. Dredge albacore in coating mixture. Place on greased baking sheet.
Bake at 425 degrees for 6 to 8 minutes. Do not overcook! Albacore should be pink in center when removed from heat.
Serve with cranberry sauce.
