Alaska Quick Baked Cod Recipe - Cooking Index
1/2 lb | 227g / 8oz | Cod fillets - thawed if necessary |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Tomato - peeled, chopped | |
1 1/2 teaspoons | 7.5ml | Chopped green onion |
1/4 teaspoon | 1.3ml | Basil - crushed |
1/4 teaspoon | 1.3ml | Oregano - crushed |
1 teaspoon | 5ml | Butter or margarine |
1/4 cup | 36g / 1.3oz | Shredded Monterey Jack cheese |
1 tablespoon | 15ml | Grated Parmesan cheese |
Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod. Dot with butter.
Bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork. Sprinkle with cheeses; bake until melted.
