Alaska Cod With Greek Walnut Salsa Recipe - Cooking Index

| Oil - as needed | ||
| Greek Walnut Salsa | ||
| 1 1/4 cups | 78g / 2.8oz | Finely-chopped tomatoes |
| 1/2 cup | 73g / 2.6oz | Finely-chopped cucumbers |
| 2 tablespoons | 30ml | Finely-chopped olives |
| 2 tablespoons | 30ml | Finely-chopped red onions |
| 1 tablespoon | 15ml | Lemon juice |
| 1 teaspoon | 5ml | Olive oil |
| 1 teaspoon | 5ml | Chopped fresh parsley |
| 1/4 teaspoon | 1.3ml | Minced garlic |
| 1 pinch | Dried oregano | |
| 1/4 cup | 36g / 1.3oz | Chopped walnuts - toasted |
Season cod fillets with salt and pepper. Saute in oil in a non-stick or heavy saute pan over medium-high heat until fish just flakes when tested with a fork.
To serve, divide cod between serving plates and top evenly with salsa.
Greek Walnut Salsa: Mix together all ingredients except walnuts until well combined. Season with salt and pepper; stir in walnuts just before serving.
