Grilled Sambal Quail With Braised Green Papaya Recipe - Cooking Index
4 tablespoons | 60ml | Sambal (condiment) |
2 tablespoons | 30ml | Minced garlic |
2 tablespoons | 30ml | Minced ginger |
1/2 cup | 118ml | Red wine |
1/4 cup | 36g / 1.3oz | Chopped scallions |
2 tablespoons | 30ml | Molasses |
1/2 cup | 118ml | Canola oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||

Mix all ingredients, marinate and refrigerate quail for at least 6 hours; overnight is ideal. Season the quail and grill until done; this will take about 20 minutes. Be careful not to burn the skin. Place on top of the Braised Green Papaya. Garnish with Chili Oil.
