1 | Black beans - (15 oz) - rinsed and drained | |
1 | Red kidney beans - (15 oz) - rinsed and drained | |
3/4 cup | 177ml | Mild salsa |
2 | Garlic cloves - minced | |
1 lb | 454g / 16oz | Boneless skinless chicken breasts - cut into 2" pieces |
Preheat the oven to 350 degrees.
In a 13- by 9-inch baking pan, combine the broth, the beans, salsa and garlic. Add the chicken and baste with some of the liquid.
Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 minutes.
