Sassy Meatloaf Recipe - Cooking Index
1 lb | 454g / 16oz | Lean ground beef (10% or less fat) |
1 1/4 cups | 296ml | Low-sodium salsa |
3/4 cup | 177ml | Quick-cooking oatmeal |
1 | Carrot - shredded | |
2 | Plum tomatoes - diced | |
1/2 cup | 73g / 2.6oz | Coarsely-chopped mushrooms |
Preheat the oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.
In a large bowl, combine the beef, salsa, oatmeal, carrot, tomatoes and mushrooms. Shape the mixture into a loaf.
Place the loaf in the pan. Bake until browned and a knife inserted in the center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.
