Chicken Penne Recipe - Cooking Index

1 | Onion - chopped | |
1/2 | Green bell pepper - seeded and chopped | |
1 | Garlic clove - minced | |
1 | Italian-style stewed tomatoes - - (14 1/2 oz) | |
1/4 lb | 113g / 4oz | Boneless skinless chicken breast - cubed |
2 tablespoons | 30ml | Dry red wine |
1 cup | 237ml | Penne or ziti |
2 tablespoons | 30ml | Grated Parmesan cheese |
In a large nonstick skillet, heat the oil. Add the onion, pepper and garlic; cook, stirring as needed, until softened, about 5 minutes.
Add the tomatoes, chicken and wine; bring to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, 5 to 6 minutes.
Meanwhile, cook the penne according to package directions. Drain and place in a serving bowl. Add the chicken mixture; toss to combine. Serve, sprinkled with the cheese.
