Bellisimo Sausage And Penne

Recipe Ingredients

2   Hot or sweet Italian pork sausages - casings removed
1   Green bell pepper - seeded and diced
1   Onion - chopped
1   Frozen artichoke hearts - (9 oz) - thawed
1/2   Frozen leaf spinach - (10-oz pkg) - thawed
8   Sun dried tomatoes halves (not oil-packed) - chopped
4 cups 948mlHot cooked penne
  = (or farfalle or medium pasta shells)
3 tablespoons 45mlPine nuts

Recipe Instructions

Spray a large nonstick skillet with nonstick cooking spray; heat. Add the sausages and cook, stirring as needed, until browned, about 6 minutes. Add the bell peppers and the onion; cook, stirring as needed, until the vegetables are softened, 6 to 8 minutes.

Add the artichoke hearts, spinach and tomatoes; cook, stirring constantly, until heated through, about 5 minutes. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are cooked through and the flavors are blended, about 5 minutes.

Serve the pasta, topped with the sausage mixture; sprinkle with the pine nuts.
